Chicken Enchiladas are a classic Mexican recipe. Easy to make, this recipe is ideal for a large group of people.

Serving size: 4

Cooking time: 30 minutes

Ingredients:

2 chicken breasts, sliced

2 teaspoons oil

1 onion, chopped

1 red bell pepper, chopped

1 yellow pepper, chopped

1 teaspoon garlic, minced

1 tin black beans

1 cup tomato passata

4 large tortillas

1 tablespoon cheddar cheese, grated

2 tablespoons sour cream

Instructions:

Add oil to a pan and roast chicken breasts until brown and cooked on all sides.

Remove it to a plate and add onion, peppers, salt, chilies and garlic to the pan.

Sauté till brown before adding beans, passata and simmer for 10 minutes.

Shred the chicken using forks and add to the pan.

Warm the tortillas and place them on a plate.

Add the filling on top and sprinkle cheese over it.

Drizzle sour cream and serve.
